Here is a recipe for Kerala Egg Puffs:


Ingredients: 

  1. 1 sheet of puff pastry 
  2. 2 boiled eggs 
  3. 1/2 onion, finely chopped 
  4. 1/2 teaspoon ginger, crushed 
  5. 1/2 teaspoon garlic, crushed 
  6. 1/4 teaspoon turmeric powder 
  7. 1/4 teaspoon chili powder 
  8. 1/4 teaspoon garam masala 
  9. 1 sprig curry leaves 
  10. Salt to taste 
  11. Oil for frying 

Instructions: 

Preheat the oven to 200°C, 10 minutes before baking. Line a baking sheet with aluminum foil or parchment/baking paper. Heat oil in a wide pan and add sliced onions. Cook till the onion becomes golden brown. Once the onion becomes golden brown, add crushed ginger and garlic and cook for 2-3 minutes. Add turmeric powder, chili powder, garam masala, curry leaves, and salt to taste. Mix well and cook for another 2-3 minutes. Remove from heat and let it cool. Roll out the puff pastry sheet and cut it into small rectangles. Place a small amount of the onion mixture on each rectangle and top it with half of a boiled egg. Fold the pastry over the egg and seal the edges. Place the puffs on the prepared baking sheet and bake for 15-20 minutes or until golden brown. Enjoy your delicious Kerala Egg Puffs! 😋
